A REALLY GOOD CRUNCHY TUNA SALAD SANDWICH

“I know it sounds crazy, but Chandler, this is the greatest sandwich in the world!”

Call me crazy, but I’m convinced Joey was talking about this sandwich!

Toasted sourdough tuna salad sandwich layered with arugula and Swiss cheese, served on a plate with red cherry tomatoes.

Crunchy, creamy, peppery, and loaded with protein, this tuna salad sandwich has become a serious staple around here. I make it at least once a week, whether for breakfast, lunch, or sometimes both. It’s that good.

And because good things are meant to be shared, I thought I’d pass this one along to you, my friend.

YOU’LL NEED

  • 1 can of tuna, drained

  • 1 single-serving container of plain Greek yogurt

  • 1 tbsp Dijon mustard

  • Green onions, chopped, to taste

  • Dill pickles, chopped, to taste

  • 2 slices of sourdough bread

  • A handful of arugula

  • 2 slices of Swiss cheese

  • Freshly cracked black pepper

  • Hemp seeds, optional

In a bowl, mix together the tuna, Greek yogurt, Dijon mustard, chopped green onions, and dill pickles. Add a generous amount of freshly cracked black pepper and give everything a good stir.

Meanwhile, toast your sourdough until golden.

Now, assemble! Start with a handful of arugula on the bottom slice, followed by a generous scoop of creamy tuna salad. Sprinkle with hemp seeds, if using, layer on the Swiss cheese, and finish with your second slice of toast.

As a mom who's often on the go, I looove me a simple, protein-forward meal that doesn't require much fuss or thinking. Much like my Peach Yogurt Protein Smoothie, this crunchy tuna sandwich is one of those easy, satisfying lunches I find myself coming back to.

Could I BE any more obsessed with a sandwich?
